In a fickle industry that fluctuates in time with a customer base always looking for the latest trend, Kirby Dorius is a firebrand that is drawing attention from serious foodies locally and from Boston.
Dorius’ brainchild, State Fare, is an artistic culinary experience currently housed at Pawtucket’s Mad Dog Studios. State Fare blurs the line between two mediums and creates a dynamic experience by bringing a five star restaurant and all its amenities to an art gallery. Although in the past Pawtucket hasn’t necessarily been synonymous with fine dining, Mad Dog Studios is one of the contributions to the burgeoning art community that Pawtucket is rapidly spawning.
All of the food State Fare serves is locally grown unless its impossible to procure locally. And while Dorius might hail from Western Mass, he has Rhode Island roots as a Johnson and Wales alumnus. He deliberately keeps the menu fresh and entertaining as well as affordable. You won’t get chicken Alfredo at a State Fare event, but you won’t complain it’s the same old, same old, either.
The next State Fare event is on December 12 from 6 to 8:30 pm for a private shopping event. The ticket price includes wine provided by Mad Dog, small plate tasting and complimentary gift wrapping. This event is limited to 36 guests; email statefareri@gmail.com to reserve a spot.
