Blackberry Thyme Spritz

  • 2oz Bulleit Rye Whiskey
  • 1oz Blackberry Thyme simple syrup
  • Soda water

Build in a collins glass. Add ice, whiskey, and simple syrup. Top with soda water. Garnish with a blackberry and thyme sprig.

Blackberry Thyme Simple

  • 1.5 cups water
  • 1.5 cups cane sugar
  • 1 pint blackberries, halved and mashed
  • 6 – 8 thyme sprigs, chopped

Add all ingredients into a saucepan. Bring to a low simmer for 3-4 minutes, stirring often, and let cool. Double strain into a container for use.

The drink lends itself to the spring and summer months really well because the flavors are light and refreshing, especially for whiskey. The herbal notes from the thyme are unique and play well with the spice notes naturally found in a rye whiskey. The ease of creation allows for it to be the perfect patio drink, something to sip by the campfire or near the water during these warm summer days. This drink is a go-to of mine for private events at Skeff’s Pub, which is where you can find me most weekends serving and creating drinks like this.
